Welcome to Heir Islands first Bread School.

Have you ever wondered what the windowpane effect is or what knocking back involves? Well this is the place to find out. Soda breads, yeasted loaves, savoury snacks and sweet treats, together we will make them all. Whether you are a beginner, experienced home baker or simply a food lover our one day courses aim to take the fear out of bread making and return bread to its rightful place as 'King of the Table'.


The Firehouse Bakery is run by chef and baker Patrick Ryan, co-author of 'Bread Revolution' and as seen on BBC 2's Big Bread Experiment. Since opening the bread school in June 2012, Patrick has caught the nations imagination and wants to share his passion for great food with you. Patrick promises to accompany you beyond the limitations of bread books and take you on a hands on journey through the world of real bread.

This is a hands on experience so prepare to get floured

ImagesWe limit our class numbers to ensure each course is personailized. Throughout the day you will work side by side with Patrick as he introduces you to the versatile world of real bread, no square and pre-sliced loaves here.

By the day's end you will have produced authentic soda bread, seen your yeasted loaves rise and tasted both sweet and savoury treats. You might even get to meet the king of the bread basket, sourdough.

Course includes:

  • Return ferry to Heir Island
  • Coffee on arrival
  • Full day hands on baking experience
  • Refreshments throughout the day
  • Bake your very own hand made bread in a wood fired clay oven
  • Lunch with wine, with Roaringwater Bay serving as the back drop
  • An artisan baker's goodie bag to take home
  • And as much freshly baked bread as you can carry 

Timings: 10:30 am - 5:30pm Ferry from Cunnamore Pier at 10am ( Sturday & Sunday  9.30am) Returns at 6pm

If you are unable to join us on Heir Island in West Cork why not sign up for an evening bread course at our bakery in Delgany, Wicklow

Evening Courses - 6pm - 10pm - Delgany, Wicklow. This is a hands of course with course numbers restricted to a maximum of 8 people so as to ensure you get the most from the evening. The cost of the course is €70 per person. Throughout the evening Patrick will guide you through the wonderful world of real bread, from kneading and shaping to rolling and baking. Each person will cover a minimum of three recipes
